Ingredients
  

Carnitas

For Tacos

  • corn tortillas (or flour)
  • 1 white onion (diced)
  • 2 to 3 avocados (cut into cubes)
  • 1 bunch cilantro (chopped)
  • green salsa
  • limes

Instructions
 

  • To make the carnitas: Rub the taco seasoning all over the pork butt.
  • Add the pork butt to a slow cooker. Cook on low for 7 to 8 hours, until the pork is tender and shreds easily.
  • Shred the pork using two forks. If you want to crisp up the pork before serving you can do that by placing in the air fryer (or heating in a cast iron skillet) for a few minutes to crisp it up (optional but totally worth it!).
  • To assemble tacos: Heat the tortillas in a skillet until warm. Top tortillas with pork, onions, green salsa, avocado, cilantro, and squeeze of lime.

Notes

Tips
  • If you don't have a slow cooker, you can do this in a Dutch oven over the stovetop on low.
  • I highly recommend crisping up the pork before serving. We like to do this in the air fryer for a few minutes, but a hot cast iron skillet also works!
  • Store leftovers in the fridge in an airtight container and reheat as needed.
