Ingredients
 
 

Batter

  • 1 large banana ripe
  • 1 large egg
  • 85 grams salted butter (melted)
  • 1 cup heavy whipping cream
  • ½ cup plain Greek yogurt
  • 1 teaspoon vanilla extract
  • 255 grams all purpose flour
  • 113 grams cane sugar
  • 57 grams dark brown sugar (packed)
  • 2 teaspoons baking powder
  • ½ teaspoon fine sea salt
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • avocado oil cooking spray

Topping

  • 170 grams salted butter (melted)
  • 226 grams cane sugar
  • 1 ½ teaspoons ground cinnamon

Instructions
 

  • Preheat the oven to 400°F.
  • To make the batter: In a medium bowl, add the banana and mash up with a fork.
  • Add the egg, melted butter, heavy whipping cream, Greek yogurt, and vanilla extract. Mix together.
  • Add the flour, cane sugar, dark brown sugar, baking powder, cinnamon, nutmeg, and sea salt.
  • Mix together until a batter forms and there are no dry bits of flour.
  • Transfer the batter to a piping bag.
  • Grease the donut pans with avocado oil cooking spray. Pipe the batter into the donut pans.
  • Bake for 10 to 14 minutes, or until a wooden pick inserted in the center comes out clean. Allow to cool completely in the pans.
  • To make the topping: In a medium bowl, add the cane sugar and cinnamon.

Tips
  • Always use a digital food scale for the best results.
  • I use a mixing bowl and spatula to mix up the batter as this recipe is quick and easy. But, you can also use a hand mixer or stand mixer too.
  • Make sure to use overly ripe banana for the best flavor.
  • If you don't have a piping bag, you can spoon the batter into the donut pans.
  • You want to ensure donuts are cooled enough before coating them. They can be a little warm, but not hot or they will break very easily.
  • Store extra baked donuts under a cake dome or in an airtight container.
  • High Altitude — Bake at 400°F for 8 to 12 minutes or until, or until a toothpick inserted comes out clean.
