Add the apples, persimmon, apple cider, cinnamon, and lemon juice to a small pot and put over medium heat. Once the cider begins to bubble, reduce the heat to a simmer.
Simmer for about 10 minutes or until the mixture has thickened and the cider has reduced completely.
Transfer the mixture to a food processor and process until you have your desired consistency.
Transfer to a glass jar and let it cool to room temperature.
Store in the fridge for up to 2 weeks.

Tips
Be sure to peel the apples. The skin on the apples won’t break down as easily as other fruit skins.
If you don’t have a food processor you’ll need to simmer the fruit for much longer to break down the apples and persimmons more.
