Ingredients
  

  • 1 large cucumber
  • 2 cups plain Greek yogurt
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon lemon juice
  • 2 teaspoons minced garlic
  • 1 tablespoon fresh dill (chopped)
  • 1 teaspoon fine sea salt
  • ½ teaspoon chopped fresh mint (optional)

Instructions
 

  • Grate the cucumber using the large side of a box grater and drain moisture. Add to a medium bowl.
  • Add the Greek yogurt, olive oil, lemon juice, garlic, dill, and salt.
  • Mix together with a spatula until completely combined.
  • Add the mint or sprinkle on top before serving (optional).

Tips
  • Make sure to use plain Greek yogurt, stay away from vanilla or flavors.
  • You can use dried dill weed if you prefer, you'll only need 1 teaspoon.
  • Feel free to adjust the dill to your liking, add more if you want!
  • Store in an airtight container in the fridge.
