Ingredients
  

  • 1 large cucumber
  • 2 cups Greek yogurt
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon lemon juice
  • 2 teaspoons minced garlic
  • 1 teaspoon dried dill
  • 1 teaspoon fine sea salt
  • ½ teaspoon chopped fresh mint (optional)

Instructions
 

  • Grate the cucumber using the large side of a box grater and drain moisture. Add to a medium bowl.
  • Add the Greek yogurt, olive oil, lemon juice, garlic, dill, and salt. Mix together. Add the mint or sprinkle on top before serving.
