Add the blueberries, cane sugar and water to a small pot.
Put over low/medium heat and heat until the sugar is dissolved.
Turn the heat up to medium/high and bring to a gentle boil. Continue to boil for about 10 minutes until the juice has thickened and reduced.
Transfer the blueberry mixture to a blender along with the lemon juice. Blend until no visible signs of blueberry remain.
Transfer to a glass jar and store in the fridge for up to 2 weeks.
Tips
- You can use another berry, such as strawberries, blackberries or raspberries.
- Feel free to use less sugar if you prefer.
