Equipment

  • Food Processor

Ingredients

  • 30 ounces chickpeas (drained)
  • ¼ cup extra virgin olive oil
  • 4 cloves garlic (peeled left whole)
  • 1 teaspoon garlic powder
  • 1 lime
  • Salt and pepper to taste

Instructions

  • In a food processor, add the chickpeas, olive oil, garlic cloves, garlic powder, lime juice, and lime zest.
  • Process for 2 to 3 minutes, stopping to scrape down the sides as needed. Letting the processor run longer is what helps this hummus turn ultra smooth and creamy, rather than stopping too early and leaving it grainy.
  • Once the hummus is smooth to your liking, add salt and pepper to taste and process again until combined.
  • Serve with tortilla chips, veggies, or crackers.
  • Store in an airtight container in the fridge for up to 7 days.

Notes

Tips
  • Make sure to drain chickpeas. You can save that chickpea brine and use it in baked goods as an egg replacer! Store it in an airtight container in the fridge. Or you can also use it to make Homemade Candied Pecans Without Eggs.
  • You can use fresh garlic or minced garlic from a jar, either works.
  • For ultra smooth hummus, don't be afraid to food processor longer. You can also add a little more EVOO to get your desired consistency.
