Ingredients
 
 

Batter

  • 2 large bananas
  • 113 grams olive oil
  • 2 large eggs
  • 57 grams raw honey
  • 255 grams all purpose flour
  • 57 grams unsweetened fine shredded coconut
  • 1 teaspoon baking powder
  • ¼ cup blueberries (fresh or frozen)

Frosting

  • 1 cup plain Greek yogurt

Topping

  • Freeze dried blueberries (optional)

Instructions
 

  • Preheat the oven to 350°F. Line two 6-inch cake pans with parchment paper.
  • To make the batter: In a large mixing bowl, add the bananas and mash up using a fork.
  • Add the olive oil, eggs, and honey and mix together using a hand mixer (or whisk).
  • Add in the all purpose flour, fine shredded coconut and baking powder and mix together until combined.
  • Fold in the blueberries.
  • Transfer the batter to the prepared cake pans evenly, they will weigh about 430 grams each.
  • Bake for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the cakes cool completely before removing from the pans.
  • To assemble the cake: I like to trim one of the cake layers as the bananas can make the cakes a little domed. I do this just with a bread knife and just trim off the top. This trimmed off cake makes a great little treat for your dog if they are helping in the kitchen!
  • Place the trimmed cake layer on your cake stand or cake plate first. Then add about 1/2 cup of the Greek yogurt and spread evenly.
  • Top with the second cake layer, putting the domed side up. And, add the remaining Greek yogurt on top and spread it evenly.
  • I like to decorate with a little bit of freeze-dried blueberries around the edge, but this part is optional.
  • Then it’s ready to slice and serve! Always be sure to feed dogs small pieces so they can easily chew. Store leftover cake in an airtight container in the fridge and use it for treats or food toppers.

Tips
  • Always weigh ingredients for the best results.
  • You can use a hand mixer or stand mixer if you prefer, this recipe is super flexible.
  • If you want to use another kind of berry inside the cake, strawberries (just make sure they are de-stemmed), blackberries or raspberries are also dog safe.
  • If you do want to use peanut butter, you can use it for the frosting in place of Greek yogurt. Or you can also mix in a little peanut butter into the greek yogurt too!
  • If you’re making in advance of a dog party, be sure to store this cake in the fridge because of the Greek yogurt frosting.
  • Make sure to cut into small slices for dogs and even cut up into pieces so they can easily eat it and prevent choking.
  • If you have leftovers, store in an airtight container in the fridge and use for treats or even as a food topper.
