Preheat the oven to 325°F. Line a baking sheet with parchment paper.
In a large mixing bowl, add the rolled oats, coconut, pumpkin seeds, and sesame seeds.
In a small pot add the coconut oil, honey, and pumpkin. Put over low heat and melt until the honey and coconut oil are completely melted. Remove from heat and set aside.
Add the pumpkin mixture to the oat mixture and stir to combine completely.
Transfer the mixture to the prepared baking sheet and spread out evenly.
Bake for 20 minutes, stir to move the outside granola into the middle and the middle granola to the outside. Then bake again for 20 minutes. Reduce the oven temperature to 250°F and leave the granola in the oven for another 5 to 10 minutes and bake until the granola looks golden brown and dry.
Allow to cool completely on the baking sheet.
Break up into clusters and store in an airtight container for up to 1 month.
