Equipment

  • Digital Food Scale
  • Small Pot
  • Mixing Bowl
  • Half Sheet Pan
  • Parchment Paper Sheets

Ingredients

  • 298 grams rolled oats
  • 85 grams unsweetened wide flake coconut
  • 28 grams pumpkin seeds
  • 28 grams sesame seeds
  • 113 grams coconut oil
  • 127 grams raw honey
  • 142 grams pumpkin puree

Instructions

  • Preheat the oven to 325°F. Line a baking sheet with parchment paper.
  • In a large mixing bowl, add the rolled oats, coconut, pumpkin seeds, and sesame seeds.
  • In a small pot add the coconut oil, honey, and pumpkin. Put over low heat and melt until the honey and coconut oil are completely melted. Remove from heat and set aside.
  • Add the pumpkin mixture to the oat mixture and stir to combine completely.
  • Transfer the mixture to the prepared baking sheet and spread out evenly.
  • Bake for 20 minutes, stir to move the outside granola into the middle and the middle granola to the outside. Then bake again for 20 minutes. Reduce the oven temperature to 250°F and leave the granola in the oven for another 5 to 10 minutes and bake until the granola looks golden brown and dry.
  • Allow to cool completely on the baking sheet.
  • Break up into clusters and store in an airtight container for up to 1 month.

Notes

Baker's Tips
  • Be sure to use unsweetened coconut, this is super important.
  • If you don't have coconut oil, olive oil is also dog safe and works!
  • Stirring the granola and/or rotating your baking sheet will ensure even cooking and prevent burning.
  • Allow the granola to dry completely before putting away. I prefer to let this sit on the baking sheet overnight before storing in an airtight container.
