In a high powered blender, add the avocado, olive oil, water, apple cider vinegar, cilantro, lime juice, salt, and pepper. Blend on high until the cilantro is completely blended.
If you want a runnier dressing that isn’t as creamy, feel free to add more water until the consistency is to your liking.
Store in an airtight container in the fridge for up to 1 week.

Tips
Use ripe avocados that are soft but not brown.
You can use avocado oil in place of EVOO if you prefer.
Feel free to adjust the water amount to get your desired consistency. If you do this, you may want to check salt and add a bit more if needed.
If you want this extra creamy, you can add a few tablespoons of plain Greek yogurt in!
If you want this spicy, add in jalapeño and a pinch cumin.
