Ingredients
  

  • 1 avocado
  • 6 tablespoons extra virgin olive oil
  • 6 tablespoons water
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons cilantro
  • 1 lime
  • ½ teaspoon fine sea salt
  • ½ teaspoon black pepper

Instructions
 

  • In a high powered blender, add the avocado, olive oil, water, apple cider vinegar, cilantro, lime juice, salt, and pepper. Blend on high until the cilantro is completely blended.
  • If you want a runnier dressing that isn’t as creamy, feel free to add more water until the consistency is to your liking.
  • Store in an airtight container in the fridge for up to 1 week.

Notes

Tips
  • Use ripe avocados that are soft but not brown.
  • You can use avocado oil in place of EVOO if you prefer.
  • Feel free to adjust the water amount to get your desired consistency. If you do this, you may want to check salt and add a bit more if needed.
  • If you want this extra creamy, you can add a few tablespoons of plain Greek yogurt in!
  • If you want this spicy, add in jalapeño and a pinch cumin.
  • Store in an airtight container in the fridge.
