Ingredients
  

  • 1 pound raw whole almonds with skins
  • 2 tablespoons coconut oil (melted)
  • 2 teaspoons ground cinnamon
  • Sea salt to taste

Instructions
 

  • Preheat the oven to 300°F. Line a baking sheet with parchment paper.
  • In a medium bowl, add the almonds, melted coconut oil, and cinnamon. Mix together to coat the almonds.
  • Spread the almonds out onto the baking sheet.
  • Bake for 20 minutes, stirring halfway through.
  • When the almonds come out of the oven, generously add sea salt on top and toss to coat completely, add more salt if desired.
  • Store in an airtight container for up to 1 month.

Notes

Tips
  • Stir the almonds halfway through baking. This will ensure that the coconut oil can coat all of them as they are roasting.
  • Make sure to salt them immediately after they come out of the oven. This allows the sea salt to stick to the hot almonds, so it’s crucial step! If you don’t salt them when they are hot, the salt will just fall off the almonds.
  • Store in an airtight container in your pantry for up to 1 month (if they last that long!).
