Preheat the oven to 350°F. Line a cupcake pan, or muffin pan, with paper liners.
In a large mixing bowl, add the olive oil, grated carrots, honey, and eggs. Whisk together to combine completely.
Last, add in the dry ingredients: flour, coconut, and baking powder. Stir together until completely combined.
Fill the prepared muffin cups three-quarters full.
Bake for 22 to 26 minutes or until a toothpick inserted in the center comes out clean. Allow to cool completely in the cupcake pan.
Frost with Greek yogurt or peanut butter, depending on your dogs preference. Top with freeze dried strawberries if you want.
Store in an airtight container the fridge for up to 3 days.
Tips
Be sure to use a fine grater to grate the carrots. This will ensure the texture is right.
You can use coconut oil in place of olive oil if you prefer.
