Ingredients
 
 

  • 150 grams coconut oil (melted)
  • 113 grams carrots (finely grated)
  • 85 grams apple (finely grated)
  • 1 large egg
  • 64 grams peanut butter
  • 127 grams all purpose flour
  • 57 grams oat flour
  • 1 teaspoon baking powder

Instructions
 

  • Preheat the oven to 350°F. Line a mini muffin pan with liners.
  • Melt the coconut oil either over the stovetop or in the microwave.
  • Using a fine grater, grate the carrots and apple into a large mixing bowl.
  • Add the coconut oil, egg, and peanut butter to the mixing bowl and whisk to combine.
  • Add the all purpose flour, oat flour, and baking powder in that order.
  • Stir together with a spatula to combine completely.
  • Using a mini scoop, or a spoon, fill the muffin liners all the way full.
  • Bake for 12 to 14 minutes or until the tops look set and dry, and a toothpick inserted in the center comes out clean.

Tips
  • Always weigh ingredients for the best results.
  • Make sure to use a fine grater (not a large grate) when grating the carrots and apple. This ensures that these ingredients mix into the batter well and don't leave it gummy.
  • You can use any variety of apple you like for this, whatever you buy for you is fine for your dog. Though, John John really prefers the sweeter varieties like Fuji, Gala, or Cosmic Crisp.
  • While I'm using a mini muffin pan here, you can also use a regular size muffin pan. You will need to bake them longer though.
  • Store in an airtight container to keep them soft and moist.
  • You can also freeze these in an airtight container (like a tupperware or zip bag). Just thaw before giving to you pup!
  • Gluten Free — Replace the all purpose flour with 127 grams (3/4 cup plus 1 tablespoon) gluten free flour blend.
  • High Altitude — Bake at 350°F for 10 to 12 minutes r until the tops look set and dry, and a toothpick inserted in the center comes out clean.
