This organic French fries recipe uses sweet potatoes and mix of garlic and lemon for the best Garlic Lemon Sweet Potato Fries! These sweet potato fries are amazing as a snack or side dish for your favorite burger.
You can peel sweet potatoes or leave skin on, either works.
Cut the sweet potato into ¼-inch thick strips. Place in a large bowl of cold water and soak for 10 to 15 minutes, until the water looks murky.
Preheat the oven to 400°F. Line a baking sheet with parchment paper (or use a roasting rack).
Drain the potatoes and add the olive oil oil, garlic powder, and lemon juice and toss to coat completely.
Bake for 20 minutes, then remove and flip fries. Bake for another 10 to 20 minutes or until golden brown. Remove from oven and sprinkle with sea salt and pepper.
Add chopped parsley on top before serving.

Tips
You can use purple sweet potatoes or even Russet potatoes for these fries if you'd like.

If you're in a hurry, you can skip the water bath. Soaking the sweet potatoes in water before baking can help make them more crispy. But, as someone who makes this recipe weekly, I have skipped this many times and they are still fine!
Use a roasting rack if you want crispier fries as this allows air flow under the fries. This also ensures you don't need to rotate or flip fries as much.
If you are using a baking sheet with parchment paper, you want to be sure to flip fries to get them crispy.
Avocado oil or coconut oil are also great oils if you're out of EVOO.
Don't be afraid to bake your sweet potato fries longer, or until they are golden brown and crispy. There's nothing worse than fries that are not done, so adjust if your fries need more time as all ovens are a bit different.
