How to Make Vegan Earl Grey Blondies

Step 1

Preheat the oven to 350°F. Line a 9 x 9-inch baking pan with parchment paper.

Step 2

To make the batter: In the bowl of a stand mixer fitted with the paddle attachment (or with a hand mixer or bowl with whisk) add the cane sugar, light brown sugar, canola oil, cashew butter, coconut milk, and vanilla extract. Mix on low to combine.

Add the flour, coconut flour, cornstarch, contents of the tea bags, baking powder, and sea salt in that order. Mix on low to combine, do not over mix.

Step 3

Transfer batter into the prepared pan. Bake for 30 to 35 minutes or until a toothpick inserted in the center comes out clean.

Step 4

To make the glaze: In a medium bowl, add the powdered sugar and lemon juice. Whisk until combined into a smooth glaze. Drizzle on top of the blondies.

FAQ's

Can I use another type of oil?

Yes, if you want to use extra virgin olive oil or melted coconut oil, you can use those in place of canola oil. Both of these oils will have a flavor that will shine through in your blondies, so just keep that in mind. That’s why I chose canola oil as it’s the most neutral flavor.

Can I use another kind of milk?

Yes, you can use any dairy free milk you like. Almond milk or oat milk would also work. If you are not vegan, you can even use regular cow’s milk too! I love coconut milk as it provides a sweetness and neutral flavor compared to almond milk.

Can I use another kind of tea?

Yes, if you want to use another kind of tea, you totally can! Other types that would be delicious would be Green Tea, English Breakfast, Lemon Ginger, Lavender, Pomegranate Green Tea or any others that you enjoy!

Why is there cornstarch in this recipe?

I use cornstarch in these brownies because cornstarch can help brownies and blondies be more chewy. With eggless baking or vegan brownies and blondies, there are no eggs, so cornstarch can help. If you don't have it you can omit it, but it's better with it! If you have a corn allergy, then you can use Organic Irish Moss Powder instead.

How should I store blondies?

Just like brownies, blondies are soft and chewy, so they need to be stored in an airtight container to retain their soft and chewy texture.

  • 113 grams (1/2 cup) organic cane sugar

  • 1/2 cup organic canola oil

  • 57 grams (1/4 cup) organic cashew butter

  • 1 cup organic coconut milk

  • 1 teaspoon organic vanilla extract

  • 191 grams (1 1/2 cups) organic all purpose flour

  • 71 grams (3/4 cup) organic coconut flour

  • 2 teaspoons organic cornstarch

  • 2 bags Earl grey tea

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon fine sea salt

  • Glaze
  • 142 grams (1 cup) organic powdered sugar

  • 2 tablespoons organic lemon juice

Directions
