This is a light take on the classic grilled cheese! I use sourdough bread, mozzarella cheese, tomato slices, and fresh basil leaves. You cook this baby up just like a traditional grilled cheese. But, this Tomato Basil Grilled Cheese is anything but traditional!

You can dip this Tomato Basil Grilled Cheese in tomato soup or enjoy it on its own. I love cooking this up for an easy lunch or dinner!

Sourdough Bread: My favorite is Inked Sourdough if I'm buying it.

Mozzarella: I use Organic Valley Mozzarella.

Butter: I love Organic Valley.

Tomatoes: I use organic Roma tomatoes.

Basil: Use fresh basil leaves in this recipe.

Step by Step Instructions

Step 1

Assemble the sandwich by adding 2 slices of mozzarella on each side. Place the tomato slices on one side and the basil leaves on the other. Salt and pepper each side.

Step 2

In a small saucepan, add 1 tablespoon butter and turn onto low heat. Allow butter to melt, then place sandwich in pan. Cover with a lid. Cook for 2 to 4 minutes or until lightly golden brown on the bottom.

Step 3

Flip, adding the other tablespoon of butter into the pan, and then set down sandwich. Cover with lid and cook for another 2 to 4 minutes or until lightly golden brown on the bottom and the mozzarella is completely melted. Remove from heat.

Yes, just use your favorite gluten free bread.

Can I use another kind of bread?

Yes, I'd recommend white bread or a French bread. Keep it lighter, rather than using a whole wheat.
