How to Make this Simple Confetti Layer Cake

Step 1

Preheat the oven to 350°F. Line two 8-inch cake pans with parchment paper.

Step 2

To make the batter: In the bowl of a stand mixer fitted with the paddle attachment, add the canola oil, milk, coffee creamer, cane sugar, vanilla extract, eggs, pastry flour, all purpose flour, baking powder, and sea salt in that order. Mix on low until combined into a smooth batter. Add in the sprinkles and mix to combine.

Divide batter evenly into each cake pan, weighing about 910 grams each. Spread evenly.

Step 3

Bake for 55 to 60 minutes, or until a toothpick inserted in the center comes out clean. Allow cakes to cool completely in the cake pans. (If you're baking at high altitude, be sure to check the Notes at the bottom of the recipe for high altitude baking instructions).

Step 4

To make the frosting: In the bowl of a stand mixer fitted with the paddle attachment, add the butter, powdered sugar, vanilla extract, and milk. Mix on low until combined, then speed mixer up to high and mix for 2 to 4 minutes, or until light and fluffy.

Step 5

Crumb coat the cake, and then frost it with a little texture. Add sprinkles on top and halway up the sides.

FAQ's

Can I use another kind of oil?

Yes, feel free to use sunflower oil, avocado oil, or olive oil. I haven't tested this with coconut oil yet.

Can I use shortening in the frosting?

Yes, if you prefer to use shortening in the frosting you can just replace the butter with that.

Can I add sprinkles into the frosting?

Yes, if you want even more sprinkles, feel free to add into the frosting. I recommend adding in 85 grams (3 ounces) of sprinkles for a good funfetti frosting!

Can I make this cake ahead of time?

Yes, feel free to make this the day before your party! Just store it under a cake dome or in the fridge until the day of the party.
