Peanut Butter Caramel Chocolate Chip Blondies

Buttery, sweet, and a little salty, these peanut butter blondies are filled with dark chocolate chips and covered in a chewy caramel candy for an amazing dessert that everyone will love!

How to Make Peanut Butter Caramel Chocolate Chip Blondies

Step 1

Preheat the oven to 350°F. Line a 9 x 13-inch baking pan with parchment paper.

Step 2

To make the batter: In the bowl of a stand mixer fitted with the paddle attachment, add the melted butter, light brown sugar, vanilla extract, and eggs. Mix on low until combined.

Add the peanut butter, flour, cornstarch, baking soda, and sea salt in that order. Mix on low until combined. Add the chocolate chips and mix to combine.

Step 3

Bake for 20 minutes or until a wooden pick inserted in the center comes out clean. Allow to cool completely in the pan.

Step 4

To make the topping: In a small pot, add the cane sugar. Once the sugar on the bottom starts to melt, stir with a high heat spatula to keep from burning. The dry sugar will then sink to the bottom, so it can melt. Sugar clumps will form until the sugar turns into a liquid.

Once the sugar has completely melted into a liquid, add the butter. Be careful because steam will rise up quickly. Stir rapidly until the mixture is combined.

Once the butter is completely combined, add in the cream a little at a time. Be careful, because the cream is colder than the sugar mixture so more steam will rise up quickly. Stir rapidly to combine completely when each amount of cream is added.

Pour the caramel over the top of the blondies. Allow to set until the caramel has cooled completely or overnight.

Step 5

Cut into 24 squares (6 x 4).

FAQ's

Do I have to add chocolate chips?

No, you do not have to add chocolate chips if you don’t want to. If you’re looking for amazing peanut butter blondies with caramel, then you can omit the chocolate!

Can I use another kind of chocolate?

Yes, if you want to use semi sweet chocolate chips, milk chocolate, or even white chocolate you can do that as well!

Do I need to wait overnight to cut them?

The caramel needs to set. I always just make these or my Salted Caramel Brownies in the evening and then let them sit overnight so the caramel will set. But, if you can’t wait that long, you can speed up the process by placing the pan in the fridge. You do want the caramel to set for the full experience. If it’s not hot and not gooey (it doesn’t stick to your finger) then you’re good to go!
