These savory chips have all the nutritional benefits of beets, the crisp of traditional potato chips, and a little savory spice. I use dried rosemary and celery salt in these organic beet chips for the perfect dipping chip!
Beets have tons of nutritional value! Rich in antioxidants, beets also support digestive health, brain health, blood health, bone health, and even more. Beets are a superfood! While they may not always “beet” the best thing on their own (haha, love a good pun!), they are when you make them into healthy chips!

- Dried Rosemary: I use dried rosemary as its easy to coat these healthy chips with and bakes up nicely.
- Celery Salt: This is my secret ingredient that gives these organic beet chips great flavor!
- Salt: You'll need for topping these organic beet chips.
Tools Needed
- Mandolin: I use a mandolin to get these organic beet chips super thin. This is going to make this recipe so much better than cutting them by hand.
- Mixing Bowl: You'll need a large mixing bowl to mix up the beets with the oil and seasoning.
- Baking Sheet: You'll need one half sheet pan to bake these organic beet chips.
- Parchment Paper: I use nontoxic parchment paper for ease as this ensures the chips do not stick to the baking sheet.

Step by Step Instructions

Line a baking sheet with parchment paper.
Step 2
Wash the beets, trim off the the roots. Using a mandolin, slice the beets 1/16-inch.
Step 3
In a small bowl, add the olive oil, rosemary, celery salt, and fine sea salt. Add in the sliced beets and toss to coat completely. Allow them to sit for 10 to 15 minutes to release their natural juices.
Step 4
Preheat the oven to 375°F. Place the sliced beets on the prepared baking sheet, do not let them overlap.
Step 5
Bake for 20 to 25 minutes, until they are dried and crisp.

Baker's Tips
- Make sure to use a mandolin for slicing the beets, as you want to get them really thin and it's difficult to do this with a knife.
- Use a high quality organic extra virgin olive oil. I used Carapelli Organic Extra Virgin Olive Oil. If you don't have olive oil, you can also use avocado oil as well.
- Make sure to use parchment paper for this recipe. Parchment paper is key to making any kind of potato chips as you don't want them to stick to the pan.
- Don't be afraid to bake them a little longer. If you notice that beet chips still look wet, then bake them a little longer. They should be dry looking and shrink considerably when they come out of the oven. Give them a few more minutes if they aren't dry and still look wet.
