You will love this recipe because there is literally one ingredient — organic coconut! It’s toasted to perfection and it becomes an amazing healthy and delicious snack in a matter of minutes. This sugar free snack is so flavorful and the best thing about it is you can even share this with your dog! John John and I eat this all the time!
I use organic coconut meat slices, or it may also be called organic dried coconut. These pieces are larger and thicker than your traditional wide flake coconut that is used in baking. This makes these more like chips. Plus, the texture can range a little more because of the sizes, some are thicker, and some are thinner. This easy snack takes just a few minutes to make and you can enjoy this anytime!
Why You'll Love This Recipe

Sugar Free Snack: While I'm not one to shy away from sugar, this is a sugar free snack that is worthy! This lightly sweetened snack is naturally sweet because it's just coconut that is toasted to perfection.
Easy: This recipe is so easy! If you can make toast, you can make this. The coconut toasts up in your air fryer or even in a matter of minutes.
Dog Friendly: This is a dog friendly snack, meaning you can share this with your dog! Coconut is a great snack for dogs, as it has health benefits for them, just like it does for us!
Ingredients
Dried Coconut: This is the only ingredient in this recipe. I use Organic Dried Coconut from Nuts.com.
Health Benefits of Coconut
Coconut meat, the white, fleshy part of the coconut, is a nutrient-dense superfood offering a multitude of health benefits! Rich in dietary fiber, it supports digestive health. Coconut meat is also a good source of medium-chain triglycerides (MCTs), healthy fats that are easily digestible and can boost energy levels and enhance metabolic function. These MCTs are known to support weight management by increasing feelings of fullness and aiding fat burning. Additionally, coconut meat is packed with essential vitamins and minerals, including manganese, copper, and selenium, which contribute to bone health, antioxidant defenses, and proper enzyme function. Its antimicrobial properties help in fighting infections and boosting the immune system.

FAQ's
You can use this and it will toast up nicely. But, this is incredibly thin compared to the dried coconut I used here. So, while that will make delicious toasted coconut, the dried coconut really is more chip-like.
Store in an airtight container in the pantry.
