For this recipe, I grate the cucumber using the large side of a box grater. Then I add the cucumber into a fine mesh strainer and squish it down with my hands (over the sink of course!). If you don’t have a fine mesh strainer, you can add the cucumber to a paper towel and ring it out over the sink too!
Yes, if you prefer to use fresh dill you can! But you’ll need more fresh dill than the recipe calls for. Dried spices usually have a bit more flavor than fresh, so just be sure to add more and taste test it!
