In my Easy Quinoa Salad post, I mention that “easy” salads should include using store bought salad dressing and also not cooking any meat. So, in line with those requirements, I have this easy Mango Raspberry Salad that I made last month on a total whim. I was looking for food, and we didn't have much. But, what we did have was: lettuce, peppers, red onion, carrots, and salami. I started making salad with these ingredients, as this combo would be good with Italian dressing or a balsamic, which I also had.
However, then I noticed I had raspberries in the fridge, and I thought that they sounded good with the salty salami. So I added them in. While rummaging through the fridge door, I found the Brianna's Organic Mango Vinaigrette Dressing and knew it would be delicious with all the things I already had!
I posted the photo on Instagram and I asked if you guys wanted the recipe. The response was pretty overwhelming! So, I'm sharing it here. If you don't have salami, you can sub turkey, ham, or chicken – all of which would be amazing as well. But, I really love the saltiness of the salami so I think it really makes this salad. This easy Mango Raspberry Salad is healthy and light. Using an organic store bought salad dressing makes this salad recipe come together in minutes!
1 organic romaine heart
8 slices nitrate free hard salami, diced
2 slices organic red onion, diced
2 large organic carrots, shredded
2 organic mini orange pepper, diced
1 organic mini red pepper, diced
1 organic mini yelled pepper, diced
1/4 cup organic raspberries, chopped
- Chop the lettuce and add into 2 bowls.
- Add the salami, red onion, carrots, peppers, and raspberries evenly into each bowl.
- Top with dressing and serve immediately.
