Make this healthy and delicious Mango Raspberry Salad with this simple recipe. This easy salad uses store-bought dressing that makes it really easy to make any night!

In my Easy Quinoa Salad post, I mention that “easy” salads should include using store bought salad dressing and also not cooking any meat. So, in line with those requirements, I have this easy Mango Raspberry Salad for you. This recipe came together with what was in my fridge, but it's so good I just had to share!

I posted the photo on Instagram and I asked if you guys wanted the recipe. The response was pretty overwhelming! So, I'm sharing it here. If you don't have summer sausage, you can sub turkey, ham, or chicken — all of which would be amazing as well. But, I really love the saltiness of the summer sausage so I think it really makes this salad. And, if you're vegetarian, you can just omit the meat completely.

Easy AF: This recipe is so easy because I'm using summer sausage and store bought dressing. So, all you have to do is chop veggies and add it all together.

Summery: I love this recipe because it's really summery! The combination of the sweet and tart raspberries with the salty summer sausage and mango dressing really just tastes like summer in one bite!

Healthy-ish: This is one of those healthy-ish recipes, which are my favorite kind. Yes, it's a salad, but I'm adding summer sausage which is a little bit more fancy than lean meats like turkey or chicken which are usually in healthy salads. But, you're getting lots of veggies and even fruit in this salad. So, it's full of protein, veggies, and fruit!

Ingredients & Health Benefits

Romaine Lettuce: I use organic Romaine lettuce as the base, but you can use spinach, mixed greens, or kale as well.

Summer Sausage: I use Organic Prairie Summer Sausage which is my favorite cured meat ever! I grew up eating hard salami often and there's really no organic hard salami, but this is the closest thing and it's so good! It brings a salty flavor to this salad which is amazing.

Red Onion: I love using organic red onion when I'm doing raw onions as I think it has a better flavor and it's overwhelming. Red onions are also loaded with antioxidants!

Carrots: Organic carrots are a great source of Vitamin A and they bring color and flavor to this salad.

Mini Bell Peppers: I used organic mini bell peppers (red, orange, and yellow), but you can use regular bell pepper and any color. I do prefer the orange, yellow, or red for this recipe as they are all sweeter than the green and it lends better to the flavor of this salad. Bell peppers have vitamin C and potassium.

Raspberries: Organic raspberries bring this salad some sweet and tart flavor. Raspberries are high in antioxidants and if you have some that are on the fritz to eat alone, then adding them to a salad is a great way to use them so they don't go to waste.

Salad Dressing: I use Brianna's Organic Mango Vinaigrette Dressing for this and this is where the mango flavor comes from. You could also use a lemon olive oil dressing or a balsamic dressing too and it would be delicious with those as well.

Step 1

Chop the lettuce and add into 2 bowls.

Step 2

Add the salami, red onion, carrots, peppers, and raspberries evenly into each bowl.

Step 3

Top with dressing and serve immediately.

Can I use another dressing?

Yes, you can use any dressing you like, but the mango flavor is coming from the dressing. So, if you're using a lemon dressing then it would have a lemon flavor, instead which would be delicious as well!

Can I use another meat?

Yes, ham would be the most similar to summer sausage that's more readily available in stores. You can also use turkey or chicken as well.
