Today I'm sharing a recipe for an easy Chicken Quesadilla. This is a organic quesadilla recipe that you are sure to love! I love making quesadillas because they are easy, quick, and of course delicious. And I've lightened up the traditional quesadilla with red onions and mango salsa for an easy summer lunch that is so good! I even use my Mango Guacamole which is lighter than traditional guacamole and just perfect for summer.
I actually found this amazing organic mango salsa at Costco — from La Mexicana and it's so good! It's what I used to make my Mango Guacamole and it's delicious on tacos and quesadillas as well. Definitely pick some up for a summer salsa that's sweet and fruity!

- Chicken: I use organic chicken breasts, leftovers are great for this!
- Colby Jack Cheese: I like using organic Colby Jack cheese in this recipe, but you could use a Mexican cheese blend or even cheddar if you prefer.
- Red Onion: Using organic red onion is a little lighter and sweeter than the classic yellow.
- Cilantro: Fresh organic cilantro is key for flavor!
- Mango Salsa: I use organic Mango salsa that I found at Costco, it's so good!
- Mango Guacamole: I use my Mango Guacamole, keeping this quesadilla really light and summary.
- Sour Cream: I love Organic Valley Sour Cream, but this is optional for serving if you want.

Tools Needed

- Cast Iron Skillet: You'll need a large cast iron skillet to cook this organic quesadilla.

Step by Step Instructions
Step 1
In a large skillet, add one of the flour tortillas. Next, add the cheese, chicken, red onion, and cilantro. Cook on low heat, and let the cheese melt.
Step 2
Once the cheese is melted, place the second tortilla on top and continue to cook for another 1 to 2 minutes or until the bottom tortilla is lightly browned. Flip the tortilla and cook for another 1 to 2 minutes until the other side is lightly browned. Remove from heat.
Step 3
Cut into 4 pieces and serve immediately.
