Why You'll Love This Recipe
Light & Sweet: These Earl Grey Shortbread Cookies are light and sweet. With the addition of honey, they have a slightly sophisticated flavor profile compared to traditional vanilla shortbreads. This cookie is the perfect compliment to a warm cup of tea.
Buttery & Tender: The texture of Earl Grey Shortbread Cookies is another reason to love them. Shortbread is known for its buttery, melt-in-your-mouth texture, and these cookies are no exception. They have a tender, dense texture that is not crumbly or dry. They practically dissolve in your mouth with notes of butter and sweet honey.
Unique Flavor: Earl Grey shortbread cookies offer a sophisticated and distinctive flavor that sets them apart from traditional shortbread cookies. These are adult shortbread cookies! Infused with the aromatic notes of Earl Grey tea, which is flavored with bergamot orange, these cookies deliver a subtle yet intriguing blend of floral and citrusy flavors. This unique taste is complemented by the rich, buttery base of shortbread, creating a harmonious balance that is both elegant and delicious!

Step by Step Instructions
Step 1
Preheat the oven to 350°F. Line 2 cookie sheets with parchment paper.
Step 2
In the bowl of a stand mixer fitted with the paddle attachment, add the butter, powdered sugar, and vanilla extract. Mix on low until combined and you don’t see powdered sugar anymore, there will still be a few chunks of butter but that is okay because it’s very soft.
Add the flour and contents of the Earl Grey tea bags into the butter mixture and mix on low until combined and smooth. The dough should feel like play dough in your hands.
Step 3
Using your hands, form the dough into 36 balls and place them on the prepared cookie sheets. Flatten each one slightly so they area bout 1 ¾-inch in diameter.
Step 4
Bake for 13 minutes until golden brown. Sprinkle the tops with cane sugar immediately after coming out of the oven. Allow to cool completely on the cookie sheets. (If you're baking at high altitude, be sure to check the Notes at the bottom of the recipe for high altitude baking instructions).
