A frittata is basically a crustless quiche. It's a simple baked egg dish that can have add ins such as meats, cheese, or fruits. Sometimes milk is added to fluff up the eggs as well, but that is optional. I also sometimes add bone broth into frittatas for extra protein and nutrients.

Step by Step Instructions
Step 1
Cook the bacon to your liking. I prefer making bacon in the air fryer on bake at 400°F for about 10 to 12 minutes so it’s golden brown as I like crispy bacon. But you cook it however you like it!

Preheat the oven to 400°F. In a large bowl, add the eggs and whisk together to combine. Chop bacon into small pieces and set aside.
Step 3
In a small skillet, add the onions and olive oil. Cook over medium heat until the onions are translucent and fragrant and begin to caramelize. Cook until lightly golden brown, about 5 minutes. Remove from heat and add salt and pepper to taste.
Step 4
Grease two 6-inch cast iron skillets well with extra virgin olive oil. Pour half the eggs into each skillet. Add half the onions and half the bacon into each one evenly.
Step 5
Bake for 10 to 12 minutes or until the eggs are set.
